Kaylynn's low-fat carrot cake

1 3/4 c. sugar
1/4 c. oil
1/4 c. cornstarch
1/2 c. water
1 c. applesauce
2 c. flour
1 tsp. cinnamon
1 tsp. salt
1/2 tsp. allspice
1 tsp. baking soda
3 c. grated carrots
1/2 c. raisins (optional)
1/2 c. chopped nuts (optional)

Mix all ingredients well and stir in raisins last. Bake in sprayed 9x13 inch pan at 350 for approximately 30 minutes. Cool and frost with low-fat cream cheese frosting.
